Easy Homemade Beef Burrito Recipe with Chipotle Sauce, Rice, Corn & Guacamole

- Cook the white rice according to instructions. Once done, fluff the rice and add in your salt, lime juice, and butter (optional.)
- Chop your red onion and add to the bowl with your lime juice. Let marinate for 5 minutes before adding other ingredients. Saute your corn on the stove until lightly browned then add to your red onion and lime mixture with the rest of the ingredients.
- Saute the ground beef on the stove until browned and the juices have mostly evaporated. Add your seasoning packet and salt and stir. Add shredded Mexican cheese if desired.
- Cut up the Avocados and add all your seasonings in BEFORE you mash the avocados. Then mash and add lime juice to taste.
- Add all of the sauce ingredients and blend until smooth.
- Spread your guacamole on the bottom of the tortilla and add your beef, rice, and corn salsa. Roll the burrito and dip in sauce.
