Method
Prepare Tortillas.
- My home-made tortilla recipe can be found here: https://steelandhoneyfitness.com/4-ingredient-flour-tortillas/Or use your favorite store bought burritos!
Prepare the lime Rice
- Cook the white rice according to instructions. Once done, fluff the rice and add in your salt, lime juice, and butter (optional.)
Prepare the corn Salsa
- Chop your red onion and add to the bowl with your lime juice. Let marinate for 5 minutes before adding other ingredients. Saute your corn on the stove until lightly browned then add to your red onion and lime mixture with the rest of the ingredients.
Prepare the Beef
- Saute the ground beef on the stove until browned and the juices have mostly evaporated. Add your seasoning packet and salt and stir. Add shredded Mexican cheese if desired.
Prepare the Guacamole.
- Cut up the Avocados and add all your seasonings in BEFORE you mash the avocados. Then mash and add lime juice to taste.
Prepare the smoky chipotle sauce
- Add all of the sauce ingredients and blend until smooth.
Assemble the burritos
- Spread your guacamole on the bottom of the tortilla and add your beef, rice, and corn salsa. Roll the burrito and dip in sauce.
