High Protein Pesto Pasta (Creamy Lower-Calorie Pesto Sauce + 55g+ Protein per Serving)

Ingredients
  

  • 4 servings Banza Pasta
  • 700g Chicken Breast (about 8 tenders)
  • 1/4 cup sundried tomatoes in olive oil (or just dried for lower calorie)
  • 2Tbs-6 tbs parmesan cheese (optional)
  • salt, pepper, garlic powder
  • dried oregeno, dried basil
For the creamy Pesto dressing
  • 1 cup fresh basil
  • 1 cup spinach
  • 1/4 cup nutritional yeast or parmesan cheese
  • 2-4 tbs walnuts
  • 1-2 tbs olive oil
  • 1 tbs rice vinegar
  • 2 lemons, juiced

Method
 

  1. Cube the chicken and toss with salt, pepper, dried oregano, dried basil. Roast in the oven at 400F for 15 mins or air fry until 165F in the center.
  2. Prepare the Pasta according to instructions.
  3. Blend all of the pesto ingredients in a blender until smooth.
  4. Toss the pasta, chicken, sun dried tomatoes, parmesan cheese in a large bowl with the pesto dressing. Add extra salt, garlic powder, and lemon juice if desired.
