Prep Time 2 hours

Ingredients
  

  • 1 cup warm grass-fed milk (110F)
  • 2 1/2 tsp active dry yeast
  • 2 tbs sugar or honey
  • 4 tbs melted grass-fed butter
  • 1 egg
  • 1 tsp salt
  • 3-31/2 cups organic, unbleached all purpose flour

Method
 

Mix the dough:
  1. Mix the yeast into the warm milk and sugar or honey and let sit for 10 mins. The mixture should "bloom" and look bubbly.
  2. In a kitchen aid with the dough hook, mix the egg, melted butter, salt, and yeast mixture. Gradually add in the flour. Let it knead on medium speed in the mixer for about 10 mins. You can knead by hand for a few minutes as well.
First Proof:
  1. Place the kneaded dough into a greased bowl, cover, and let proof for 1 hour or until doubled in size.
Shaping and second proof:
