Thai Peanut Steak Salad with Mango, Avocado & Feta

Ingredients
  

For the steak marinade
  • 10 oz. Steak of choice, Sizzler or Flank
  • 1/4 cup olive oil
  • 1,4 cup coconut aminos
  • 1 tbs honey
  • 3 tbs lime juice
  • salt
Thai Peanut Dressing
  • 1/4 cup coconut aminos
  • 1 tbs rice vinegar
  • 2 tbs peanut butter (or pbfit powder)
For the Salad
  • 2 cups mixed greens
  • 2 cucumbers, mini
  • 1 mango
  • 1/3 cup corn
  • 1/4 cup feta cheese (optional
  • 1 avocado, cubed and salted
  • 4 tbs pickled onions
  • 4 tbs fresh herbs like parsley or cilantro

Method
 

Marinate the Steak:
  1. Mix all the marinade ingredients together and salt the steaks. Marinate the steaks for as long as possible, ideally 24 hours.
  2. Grill or sear the steaks until desired level of doneness. I grilled mine at 450F for about 3 mins each side for medium rare! Let rest 10 mins before slicing and slice against the grain.
Make the dressing:
  1. Blend all of the dressing ingredients together.
Prepare the salad.
  1. Chop all of the salad ingredients into bite sized pieces. Make sure to lightly salt your greens, cucumbers, and avocado chunks. Toss with the dressing and cubed meat and enjoy!
