High-Protein Honey Ground Beef Bowl with Japanese Sweet Potatoes (30-Minute Meal)

Ingredients
  

For the Sweet Potatoes:
  • 2 White Japanese Sweet Potatoes
  • avocado oil spray
  • celtic sea salt (course)
For the Beef
  • 1 lb. 93/7 Grass-fed Ground Beef
  • 1/2 packet Siete Mild Taco Seasoning Mix
  • 1 tsp salt
  • 2 tsp honey
For serving:
  • 1/2 cup low fat cottage cheese
  • 1 avocado (cubed)
  • honey (for drizzling)
  • lime juice for avocado (optional)

Method
 

Roast Sweet Potatoes
  1. Preheat oven to 400°F. Line of baking sheet with parchment paper slice your Japanese sweet potatoes in half length wise and use a fork to poke holes into the skin using the avocado oil spray spray both sides of the sweet potato and rub the oil and the salt in Place the cut potatoes cut side down and roast in the oven for about 20 to 30 minutes until crispy and golden skin side.
Cook Beef
  1. While the sweet potatoes are roasting, Heat a cast-iron skillet over the stove over medium heat. Add your ground beef in and sauté until Browned, then add all of the seasonings. Removed from heat.
Assemble the Bowls:
  1. Add the ground beef, baked Japanese sweet potato, avocado, and cottage cheese to a bowl. Add butter to the sweet potato, if desired and lime juice to the avocado drizzle the whole bowl with honey, and enjoy!
