High-Protein Gluten Free Pancake Bowls (30g Protein)

Ingredients
  

  • 1 cup oat flour
  • 6 eggs
  • 3/4 cup good culture cottage cheese
  • 3/4 cup fage nonfat greek yogurt
  • 1/4 cup almond milk
  • 1 1/2 tsp baking powder
  • 1 tsp vanilla
  • 2 tbs honey or maple syrup
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1 cup blueberries
For serving (optional)
  • 1 cup nonfat greek yogurt
  • 4 tbs honey or maple syrup

Method
 

  1. Place all of the ingredients (minus the blueberries) and blend until smooth. Let the batter sir for 3-5 mins (this gives it a fluffier texture.)
  2. Pour the batter into 4 meal prep containers and bake for 12-20 mins at 375F.
  3. Top with extra blueberries, nonfat greek yogurt, and honey or maple syrup if desired!
