Chipotle Lime Chicken Power Bowls with Spicy Mayo (Easy, High protein, Meal prep)

Ingredients
  

For the Chicken
  • 3 lbs Chicken Thighs or Chicken Breasts
  • 2 Tbs avocado oil
  • 1 packet Siete Mild Seasoning Mix
  • 1 tsp salt
  • 1/4 tsp cayenne pepper (optional)
For the Rice
  • 2 cups white rice uncooked
  • 3 cups bone broth or water
  • 2-3 tbs butter (optional)
  • 3 limes juiced
  • salt to taste
  • 1/2 cup chopped cilantro (optional)
Veggies and Beans
  • 1 can black beans, drained and rinsed
  • 1 onion
  • 2 Bell peppers, chopped
  • salt and pepper to taste
  • 1 tbs avocado oil
Spicy Chipotle Sauce
  • 1/2 cup Mayo (or Greek Yogurt)
  • 2 tsp hot sauce
  • half lime juiced
  • 1/2 tsp honey
  • sprinkle of Siete mild seasoning mix (optional)

Equipment

  • Rice Cooker
  • Stove top
  • Air fryer

Method
 

  1. Prepare and season the chicken. Chop chicken thighs or breasts into bite size pieces. Toss with oil and seasoning packet and airy fry at 400F for about 12 mins or saute on medium heat on the stovetop until center reaches 165F. Let rest
  2. Prepare the cilantro, lime rice. Prepare rice on stove top or in the rice cooker with the broth or water until fluffy. Add all the additional ingredients for the rice and set aside.
  3. While the rice and the chicken are cooking, prepare the veggies. Slice the onion ad bell peppers and saute on the stove in oil until soft and browned. Season with Salt and pepper. Season the black beans with salt.
  4. Prepare the sauce. Add all the ingredients in a bowl or a blender and mix.
  5. Assemble the Bowls: Add a layer of rice, then chicken, then veggies and beans, and finish with a drizzle of the sauce, extra lime juice and extra cilantro.
