- Start the sourdough buns about 4 hours ahead of when you're planning to eat dinner. Or, use your favorite store-bought brand!
- Make the carmalized onions: Finely chop your sweet onion. Saute on a skillet in some avocado oil over medium heat. If the onions start to stick, keep adding splashes of water until they turn a deep brown and soften. Add your salt and coconut sugar and stir. Remove from heart.
- Prepare the patties: Add the beef to a bowl and mix in salt and pepper into the beef. Divide the beef into 6-8 patties. salt and pepper the outside of the patties. Heat Avocado oil in a cast iron skillet. place a small square of parchment paper over each patty, add them in the skillet, and use the bottom of a glass to smash the burgers really thin into the pan. Let cook until browned, sprinkle with mustard, then flip. Add your slices of cheese and then cover with a lid until the cheese is melted. Stack the patties in twos, then remove from the heat.
- Prepare the sauce: Add all of the ingredients into a bowl with 3 Tbs of the carmelized onions you prepared.
- Optional: Toast the buns: Add some butter to a skillet and toast the buns until the inside is crispy.
- Assemble the burgers: Add a layer of sauce to the bottom of the bun, then a layer of tomato, lettuce, a stack of two hamburger patties, more sauce, and carmelized onions. Serve with fries and enjoy!
