Ingredients
  

  • 1 cup natural creamy peanut butter
  • 2/3 cup coconut sugar
  • 1 tsp vanilla extract
  • 2 eggs
  • 3/4 cup GF oats
  • 1/2 tsp baking soda
  • 2/3 cup semi-sweet chocolate chips mini or regular
  • flaky sea salt to top

Method
 

  1. Preheat oven to 400F
  2. Mix all of the oats, salt, baking soda in a large bowl.
  3. Add the coconut sugar, eggs, peanut butter, vanilla, and stir
  4. Add the chocolate chips.
  5. Roll into balls, place on a parchment sheet and bake for 7-8 mins or until just done.
  6. Top with flakey sea salt if desired
