Prepare the chicken thighs
- Salt all of the chicken thighs on both sides. Mix all of the marinade ingredients in a bowl and then pour over the chicken in a bowl. Let marinade for 30mins-24 hours (the longer, the better.)
- Airfry at 375 for about 10-15 mins or until the center reaches 165F. Let rest 10 mins before slicing. These also are amazing grilled.
Prepare the butter and lime rice
- Cook the rice according to instructions. Fluff the rice with salt, 1-2 limes juiced (depending on how tangy you like it, and 2-3 tbs of grass-fed butter.
Assemble Bowls:
- Mix all of the sauce ingredients in a bowl.
- Place rice and chopped chicken thighs, in a bowl. Top with sliced avocado, pickled onions, chopped cucumber, and cilantro if desired.
