Honey Lime Chicken Rice Bowl with Cucumbers, Pickled Onions & Honey BBQ Aioli

Honey Lime Chicken Rice Bowl with Cucumbers, Pickled Onions & Honey BBQ Aioli

Ingredients
  

  • 2.5 lbs  organic boneless, skinless chicken thighs
  • 1/3 cup coconut aminos
  • 2 tbs  lime juice
  • 2 tbs avocado oil
  • salt
  • 1-2 tbs honey
Butter and Lime White Rice
  • 2 cups cooked white rice
  • 2-3 tbs grass-fed butter
  • 1-2 limes, juiced
  • salt to taste
Honey Bbq aioli dressing
  • 4 tbs avocado mayo
  • 1 tbs honey
  • 1 tbs bbq sauce
  • 1 tbs mustard
  • sakt, pepper, paprika
  • water (to thin)
Serve with
  • chopped cucumbers
  • pickles onions
  • cilantro (optional)
  • 2-4 avocados

Method
 

Prepare the chicken thighs
  1. Salt all of the chicken thighs on both sides. Mix all of the marinade ingredients in a bowl and then pour over the chicken in a bowl. Let marinade for 30mins-24 hours (the longer, the better.)
  2. Airfry at 375 for about 10-15 mins or until the center reaches 165F. Let rest 10 mins before slicing. These also are amazing grilled.
Prepare the butter and lime rice
  1. Cook the rice according to instructions. Fluff the rice with salt, 1-2 limes juiced (depending on how tangy you like it, and 2-3 tbs of grass-fed butter.
Assemble Bowls:
  1. Mix all of the sauce ingredients in a bowl.
  2. Place rice and chopped chicken thighs, in a bowl. Top with sliced avocado, pickled onions, chopped cucumber, and cilantro if desired.
