Ingredients
  

  • 2 Large Sweet Potatoes
  • 1 cup Organic Sliced rotisserie chicken
  • 2 Avocados
  • 1-2 limes
  • 1 cup blackberries
  • honey (for drizzling)
  • Rice for serving (optional)
  • Chopped cilantro (optional)

Method
 

  1. Preheat the oven to 400F. Line a baking sheet with parchment paper. Chop Sweet Potatoes and season with salt and avocado oil. Roast for 30 minutues or until crispy.
  2. Mash the Avocados in a bowl with salt, pepper, lime juice, and chopped cilantro if desired.
  3. Slice the organic rotisserie chicken and chop the blackberries into bite sized pieces.
Assemble the bowls:
  1. Add all of the components into a bowl and drizzle with lime juice and honey!
