Smoky Maple Caramelized Onion Burger

Servings: 3

Ingredients

For the burgers:
  • 1 lb. Grass-finished Ground Beef (I used 90/10)
  • salt
  • pepper
  • smoked paprika
  • garlic powder
  • onion powder
For the Smoky Maple Aioli:
  • 1/2 cup avocado mayo
  • 2-3 tbs maple syrup
  • pinch salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp pepper
For the caramelized onions:
  • 1 sweet onion, thinly sliced
  • pinch salt
  • 2 tbs maple syrup
For serving:
  • 3 eggs fried
  • Fries
  • 1 batch sourdough discard buns (or favorite buns of choice)

Method

Prepare the buns
  1. Skip this step if using store bought buns! Mix the dough ingredients together and knead for about 5 mins. Cover and let dough proof for about 90 mins or until doubled in size.
Prepare Buns for second proof:
  1. After the dough has doubled in size, Push all of the air out and divide into 6-8 equal balls. Shape into balls, and place them on the parchment lined baking sheet (be Sure to space them out, only 6 per sheet.) Cover, and let rest for second proof until the buns have doubled in size (45-60 mins.)
Prepare the oven fries:
  1. Peel and slice potatoes of choice. Place on a parchment lined baking sheet and toss with oil, salt, and bake at 400F for about 45 mins until crispy.
Make the sauce:
  1. Mix all of the sauce ingredients together in a bowl and set aside.
Bake the Buns:
  1. Uncover the buns and brush each with egg wash (1 egg yolk + 1 tbs of water.) Bake at 350 for 18-20 mins. Wait 15 mins before slicing
carmelize the onions:
  1. Thinly slice the sweet onion and sauté over medium heat in oil for about 20-30 mins. Add a splash of water if they start drying out after about 15 mins. Add the maple syrup and salt and stir until a dark amber color. Remove from heat.
Season and cook burgers:
  1. From your beef into three even patties. Season both sides generously with all of the ingredients listed. Grill or sear on a hot cast iron skillet until reached desired level of doneness.
Assemble Burgers:
  1. Slice the buns in half, butter, and toast on a pan. Add a spoonful of sauce, 1 burger patty, another layer of sauce, caramelized onions, and a fried egg. serve with the fries and extra maple sauce for dipping!!!
