Roast Sweet Potatoes:
- Preheat oven top 425F. Chop and peel sweet potatoes into small, bite sized cubes. Line a baking sheet with parchment paper, toss the sweet potatoes with salt and oil, and place on lined baking sheet. Roast for 30-40 mins, stirring in between.
Prepare the ground beef:
- Saute beef on the stove until browned and most of the juice has evaporated. Add salt and siete packet seasoning and stir.
Assemble the Bowls:
- Place 1/2 lb. of ground beef in each container, add the sweet potatoes, 1/2 cup of cottage cheese to each container, 1/2 avocado (salted), pickled onions, and drizzle with hot honey!
