Ingredients
  

For the Beef
  • 2 lbs 93/7 Grass-fe Ground Beef
  • 1 Packet of Siete Mild Seasoning Mix
  • 2-3 tsp salt
For the sweet potatoes
  • 3 large sweet potatoes
  • 3 tsp salt
  • 1 tbs avocado oil
Serve with:
  • 2 avocados
  • 2 cups good culture low fat cottage cheese
  • 4 tbs pickled onions
  • 4 tbs hot honey
  • lime juice (optional)

Method
 

Roast Sweet Potatoes:
  1. Preheat oven top 425F. Chop and peel sweet potatoes into small, bite sized cubes. Line a baking sheet with parchment paper, toss the sweet potatoes with salt and oil, and place on lined baking sheet. Roast for 30-40 mins, stirring in between.
Prepare the ground beef:
  1. Saute beef on the stove until browned and most of the juice has evaporated. Add salt and siete packet seasoning and stir.
Assemble the Bowls:
  1. Place 1/2 lb. of ground beef in each container, add the sweet potatoes, 1/2 cup of cottage cheese to each container, 1/2 avocado (salted), pickled onions, and drizzle with hot honey!
